In recent decades, the development and utilization of selenium (Se) resources have attracted considerable attention based on evidence that Se deficiency is associated with some human diseases. In this study, Enshi Se-enriched Sesamum indicum L. [black sesame (BS)] pigment (BSP) was extracted by ultrasonic-assisted extraction with process optimization, the highest BSP yield of 1.36% was achieved when ultrasound temperature, extraction pH and ultrasound power was 73 °C, 2.9 and 273 W, respectively.
