概述了肉馅去筋膜技术及相关理论的研究现状,分析了该技术目前存在的主要问题。介绍了几种典型的肉馅去筋膜系统和影响肉馅去筋膜效果的因素,以期为肉馅制品加工生产实践提供理论依据和技术支持,并对其发展前景作了展望。
