In the present study,wax gourd were used as raw material to produce wax gourd osmanthus beverage.The effects of osmanthus extracts,xanthan gum amount,sucrose amount,citric acid amount and osmanthus fragrance amount on the quality of wax gourd osmanthus beverage were studied.The optimal levels of the parameters were optimized using single factor test and orthogonal test.Results showed that the optimal formula of wax gourd osmanthus beverage is: wax gourd juice 100 mL,water 100 mL,osmanthus extracts 10 mL,xanthan gum 0.15 g,potassium sorbate cit...
