Citric acid,EDTA-2Na,and Vitamin C were used as color-protection agents in soft-packed bamboo shoots for second sterilization. The color of bamboo shoots was measured under high-temperature or light-enhanced stored environments to optimize the color-protection formula. The results show that citric acid could well protect the color of bamboo shoots at the concentration of 0. 1%.
