To obtain angiotensin converting enzyme(ACE) inhibitor from protease-digested rice bran protein, the method of salt-out was adopted to extract rice bran protein, which was then digested by pepsin, trypsin, papain separately or jointly. The hydrolysised products were separated through gel and ion-exchange chromatogram. The separated parts were determined for their ACE inhibitor activity.
