Perilla frutescens extract has been acknowledged for its robust antibacterial properties, while epsilon-Poly-Lysine (epsilon-PL) stands as a naturally occurring food preservative. However, their combined antibacterial activity and mechanisms has not been fully understood. Therefore, the aim of this study was to elucidate the combined antibacterial activity of the epsilon-PL/Perilla combination against Pseudomonas fluorescens.
