OPEs represent a class of novel persistent environmental pollutants. Crayfish ( Procambarus clarkii ) are popular freshwater crustacean products among consumers, with the Jianghan Plain being a major production area. The objective of this study was to investigate the exposure levels of OPEs in crayfish from the Jianghan Plain, to assess the health and safety risks associated with the consumption of crayfish, and to explore the bioaccumulation effects of OPEs in sediments on crayfish.
