Fragrant sesame oil was prepared by using maillard reaction,and the preparation process was optimized. The orthogonal test results indicated that the optimum technological conditions were as follows:solid–liquid ratio was 1∶5(g/m L),ratio of sesame meal to oil was 1∶10(g/m L),heating temperature was 120℃,alkaline protease was 2.5%,hydrolysis time was 3 h,Maillard reaction time was 30 min.
