With olive pomace as raw material, the olive pomace polyphenols was extracted and purified by microwave–assisted technology. Single factor method and orthogonal array design were used to optimize the extraction process of olive polyphenols. The optimum parameters were as follows: liquid-solid ratio 20 mL/g, microwave time 2 min, microwave power 200 W and ethanol concentration 50%.
