The activities of phenylalanine ammonialyase (PAL), peroxidase (POD) and polyphenol oxidase (PPO) and the contents of malondialdehyde (MDA), polyphenol and lignin in fresh-cut bamboo shoots stored at 4 ℃ were measured and the lignification mechanism was explored.
