Hyperspectral imaging technology has been widely used in the non-destructive testing of fruits. However, the curvature change on the surface of fruits leads to differences in the incident angle between different regions and a fixed light source, resulting in distortion of the reflectance in the edge regions. This distortion poses a severe challenge to the detection of early bruise.
