Objective To obtain angiotensin-converting-enzyme (ACE) inhibitor from the hydrolyzates of rice bran protein. Methods The deposition method of adjusting isoelectric point was adapted to get rice bran protein. The protein was hydrolyzed with pepsin and trypsin successively.
